Vegetable Wreath Appetizer

A fun way to get kids to eat their veggies is to make it look like something else. This holiday season, arrange your veggie tray like a wreath for a fun presentation that all ages will love!

What you need:
  • Round tray, plate or platter
  • Small round dish for dip
  • 1-2 heads of broccoli
  • 1 package cherry tomatoes
  • 1 small, thin cucumber
  • 1 red pepper
Use other veggies as optional decorations for more color.

What you do:

1. Wash all the vegetables. Tip: My broccoli wasn't as crisp as I would have liked, so I trimmed the ends and soaked it in a big bowl of cold water to perk it up.

2. Cut the broccoli into bite sized pieces. I leave some stems, but you can trim it if you'd like. Cut the top off of the red pepper, take out the seeds and slice it into rings -- I used a very sharp mandolin on the thickest setting. Slice the cucumber into rounds -- I used the mandolin for those, too.

3. Place the dip bowl in the center of the tray and pile the broccoli around it. You can then arrange it a little if you'd like.

4. Take two of the red pepper circles and set them together to make a bow. Break the rest of the slices to make ribbon pieces. Arrange two for bow tales and the rest around the circle of broccoli.

5. Use the tomatoes and cucumber as "ornaments" and arrange between the red pepper ribbons.

6. Add the dip of your choice to the small dish and enjoy!
